Basic (American) Muffin Mix

You can buy a tin that makes 12 muffins or cup cakes from KMart or Coles or any cookware shop. Use paper cases or squares of cooking paper to line the tins.

  • 2 cups plain flour
  • 4 teaspoons baking powder
  • (or 2 cups SR flour)
  • 1/2 cup sugar (optional, or can increase to 1 cup if desired)

Mix dry ingredients thoroughly.

  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 egg

Whisk so combined well.

Make a well in the centre of the dry ingredients and add milk mixture. Mix until just combined.

Add whatever you like:

  • Banana (mashed) & choc chips
  • Frozen raspberries & white choc chips

Try savoury:

  • cheese or fetta
  • sundried tomatoes
  • bacon bits (cooked)
  • mashed pumpkin

Bake until golden brown on top at 180-190C for around 20 minutes. Yummy while still warm, or can freeze & microwave for around 15 seconds each from frozen.
