Cinnamon Sultana Loaf

  • 4 tablespoons softened butter
  • 1/2 cup sugar
  • 2 eggs
  • 2 cups plain flour
  • 2 teaspoons baking powder
  • (or 1 cup plain flour and 1 cup SR flour)
  • 2/3 cup buttermilk
  • 1/2 teaspoon cinnamon
  • 1/2 cup sultanas

In a large bowl, with a wooden spoon, cream butter and sugar. Add eggs, one by one. Add the first cup of flour, mix well. Add the second cup of flour and the baking powder, mix well. Add the cinnamon and the sultanas, mix until combined.

Cook in a loaf tin for around 50 minutes on 180C, or until it sounds hollow when tapped.

Lovely sliced, with butter.
